It is made out of pasteurized milk. They use the traditional cheddar method to mature our cheese.
They wrap the cheese into a cloth in order to keep the moisture in during its long maturation (1 year minimum). The result is a strong and nutty taste. This award-winning cheese has a distinctive flavour that you will definitely keep for a long time after the first bite. Hegarty's are located in Whitechurch, a village on the edge of Cork city.
